3 Things to Make With…Cranberries

As we make our way through the produce section, we glance a bit wistfully toward the spot where, just a few months ago, the raspberries, blackberries and blueberries were stacked high. Sigh. We reach for a bag of fresh cranberries (we’ll need those for Thanksgiving, obviously), and then it hits us: why do we only use cranberries to make cranberry sauce for Thanksgiving?

 

After all, those sweet-and-tart little berries abound this time of year, and they add a berry-licious boost to all kinds of baked goodies. Not only that, they’re down right plentiful (and pretty cheap) right now. Here are three very different, very delicious cranberry treats, all perfect for the season but still full of that fresh berry flavor. Best of all, none take more than 20 minutes to prep.

 

 

1. Cranberry Cake

A moist, easy-to-make cake sits atop a sweet layer of cranberries and pecans. This is one of those great desserts that simple enough to make just for fun but looks pretty enough to serve on special occasions.

 

 

 

2. Apple Cranberry Crisp

This is just the essence of autumn: warm spiced apples, cranberries and pecans. And it’s eminently versatile: you could serve this for a weekend brunch (it’s actually a pretty healthy way to start the day) or as a dessert (with a scoop of ice cream — which you can justify because, again, the crisp itself is healthy, go figure).

 

 

 

3. Fresh Cranberry Scones

Here’s another versatile goodie because, as scone lovers know, scones are perfect with your morning coffee, perfect with your afternoon coffee, and perfect with your cup of nighttime tea. In other words, they’ll be gone before you know it.
