Ever since the Pilgrims fell for corn at the first Thanksgiving, Americans have loved the vegetable. And what’s not to love? It’s sweet, it’s crunchy, it’s (think popcorn, creamed corn, corn on the cob — the list goes on forever) and it tastes just as good raw as it does cooked.
In fact, the only downside of fresh corn is that it’s truly only at its best only during the summertime. But then again, if it weren’t so seasonal, it wouldn’t be so special. Think of how many summer evenings you spent enjoying an ear of fresh corn on the cob at a cookout; corn plays a major role in many people’s summertime memories.
In addition to good ol’ corn on the cob, corn chowder is a surprisingly refreshing summertime soup, and we also love corn in salad, such as our roasted corn and red pepper salad here.
