Classic Cornbread: An American Essential

Not only is cornbread an intensely satisfying comfort food that showcases the pure flavor of corn, it’s a breeze to make. (That’s no doubt why it’s called a type of “quick bread.”) Made with cornmeal, leavened with baking powder, and sweetened with either sugar or honey, cornbread recipes can be found all over the U.S., but it’s particularly popular in the South and Southwest, where it’s often served as a side for barbecued meats.
Sweetness and texture vary wildly — some people like fluffy cornbread drenched in butter and honey alongside their fried chicken, while others prefer a more solid piece of cornbread to mop up their spicy chili. Same goes for sweetness: some cornbread recipes taste more like corncake, they’re packed with so much sugar. Other variations include spicy cornbread sizzlin’ with jalapenos, cheddar-cheese cornbread, and cornbread studded with sweet corn kernels. Most cooking methods are pretty straightforward, but if you like a crisp, golden crust, definitely bake your cornbread in a preheated cast-iron skillet. The sugar in the batter will caramelize instantly on the sizzling pan.
