Bean-and-Beef Enchilada Casserole: Dinner for $10

Oh goodness, where to begin with this Beef-and-Bean Enchilada Casserole? Some recipes require a hard sell (“Yes, you really can have salad for dinner …”), but really, this one sells itself.
First, of course, it’s a casserole, and we probably don’t need to repeat all the reasons why casseroles are to dinner what action heroes are to blockbuster movies: no matter how formulaic they are, they’re sure to be crowd-pleasers. And by “crowd,” we mean “crowd.” There are 6–8 servings here (at just about $1.38 per serving), so you can whip this baby up for a weeknight dinner and be sure to have plenty of tasty leftovers. Or … it’s perfect for those extended family get-togethers when you’re wracking your brain trying to think of something to bring.
Ground beef, beans, diced chilis, cheese and sour cream … yep, all the fixin’s of your classic enchilada, but without all the mess.

i was given a small round green (squash?) it is like a small pumpkin. what is it called and how do i cook it?

Thus was so easy to make. Tasty. I did, however, double the sour cream mixture. Delicious!!!!
