Eggs, ham, potatoes. Hmm, sounds a lot like breakfast. Well, this delicious Breakfast Casserole is — no doubt about it — all about the day’s first meal.
But how many times have you craved a rich creamy egg dish when you’re really not supposed to. (No, we’re not counting that 3 a.m. meal at the diner after you’ve been out past your bedtime, which probably hasn’t happened in years, anyway.) On an given crisp fall evening, ham and eggs would go down just fine. Think about it. You’ve got three ingredients that are hard to beat, with a fourth we forgot to mention: cheese, delicious shreds that make this casserole the heavenly dish it is.
With this dish clocking in at only 25 minutes, you going to want to keep the recipe on hand for easy dinner after a busy day or even a late weekend super. Best of all, any leftovers will never go to waste. Breakfast Casserole for lunch anyone?
A fancy brunch? Yup, his quick and easy Breakfast Casserole would look mighty nice on the brunch table, surrounded by all kinds of other lovely dishes. But in the end, here’s one breakfast dish that we think makes a lot of sense on a busy workday when you want something fast, tasty, and as hearty as, well, any great casserole with eggs, ham, and potatoes is bound to be.
With all the time you’ve save from making this casserole dish, you’ll be able to whip up a salad, too. Your family will think you’re a genius. Maybe you are!
