What’s Your Favorite Brunch Food? – Readers Respond

We love brunch, and apparently so do a lot of our Recipe.com Facebook fans. Really, what’s not to love? So often breakfast gets lost in the morning rush, lunch is on the go, and dinner — well, it’s the source of oh-so-many weary laments (“What to have for dinner?”).
But brunch, by it’s very hybrid nature, is a beautiful creature, existing in its own peculiar netherworld somewhere between breakfast and lunch, which means it breaks free from the constraints of your workaday schedule. It’s all about long, lazy mornings, cozy kitchens, and having the time to do something a little special for no other reason than that you want to.
We asked our Facebook fans what their favorite brunch food was, and their responses ranged widely, from the traditional (eggs benedict) to the surprising (shrimp fried rice) to the hilarious (“celery” — at least we think you’re joking, Theodore B.). Some were very specific. Sondra B. tantalized us with her detailed menu: “Tenderloin medium rare, fried egg, Mimosa, biscuits, oj, espresso.”
Sounds delicious!
Quiche and other baked-egg dishes, though, turned out to be the go-to faves, in particular those made with crab or veggies. So for all you eggheads out there, here are some of our favorite quiche and baked-egg recipes:
Crab Quiche

This light, simple crab quiche takes just 10 minutes to prepare, meaning you have more time on your morning off to…do absolutely nothing!
Crab and Swiss Strata

English muffins replace the pie crust, making this a strata instead of a quiche — but it’s just as delicious.
Mushroom-Spinach Strata

This vegetarian strata bakes up golden and fluffy; the classic combo of mushrooms and spinach is a winner!
Savory Roasted-Vegetable Strata

Mushrooms, bell peppers, zucchini and green onions star in this baked-egg dish.

By far the best brunch for my money is Eggs Benedict. I know Canadian Bacon is the usual, but Crab meat is very good, too. Not only is it tasty but it is a family tradition on holidays. Goes well with Champaign.
