Short on Time? Try Breakfast for Dinner!

After a particularly long day at work, with what feels like an even longer to-do list waiting at home, the last thing I want to do is spend hours in the kitchen cooking an elaborate meal. On hectic nights, I turn to quick and easy recipes like Egg-Enchilada Skillet.


Rushed or not, breakfast for dinner is actually one of my favorite dining concepts. It breaks up the monotony of chicken, potatoes, veggies, repeat, and brings something fun and unexpected to the table.


Not to mention, breakfast for dinner is usually super quick to cook. When’s the last time you had to braise eggs for an hour on the stovetop?


Egg-Enchilada Skillet is one of my go-to, ultratasty, quick-cooking recipes I rely on during time-crunched weeknights. This one-skillet dish combines protein-packed scrambled eggs with flavorful, south of the border ingredients like tortilla chips, salsa, black olives, and Monterey Jack cheese in a big bowl of hot and cheesy deliciousness.




Simply scramble eggs in a hot skillet, stir in the rest of the ingredients, and top with a dollop of sour cream or fresh salsa, and fresh avocados for extra flavor. Egg-Enchilada Skillet is done in under 20 minutes, leaving you with plenty of time to tackle that to-do list.
