Simply scramble eggs in a hot skillet, stir in the rest of the ingredients, and top with a dollop of sour cream or fresh salsa, and fresh avocados for extra flavor. Egg-Enchilada Skillet is done in under 20 minutes, leaving you with plenty of time to tackle that to-do list.
