Homemade Biscuits: You Asked For It!

Are flaky biscuits eluding you? Join the club. When we asked Recipe.com Facebook fans to tell us the dishes they most want to get right (and sometimes struggle with) biscuits were high on the list.
Let’s start with watching our how-to video: “How to Make Biscuits.” Self-rising flour (containing salt and leavening agents) and buttermilk are the keys to these biscuits. You can make a batch ahead of time and freeze them for easy serving whenever you’re ready.
Flakiness begins with the way you cut your butter into your flour mixture (either with a pastry cutter or with two knives). Keep those crumbs about dime-size (not too large or too small) so that butter is distributed evenly.
Best-Ever Biscuits: Traditional flaky biscuits, these are made with all-purpose flour, sugar, salt, cream of tartar, milk, and shortening or butter. Make sure you chill your butter if you choose it over shortening. And remember that it’s easy to change up the flavor of biscuits by adding some herbs or red-pepper flakes, or a bit of cheese (such as Cheddar).
Cheddar-Chive Cream Biscuits: Rich? You bet. Fresh chives and grated Cheddar cheese liven up these very special biscuits, which are made with heavy cream.
Biscuit Blossoms: Flower power meets flour power in these sweet little bite-size biscuits made with scallions and with a grape-tomato at the center.
