Comforting Beef and Barley Soup: It Just Tastes Indulgent

With Christmas right around the corner, I think it’s safe to say we’re in the thick of the holiday season.
From parties with buffets of seasonal cakes and cookies, to the urge to curl up with a hearty, comforting meal every night, the chilly winter season that’s now upon us is full of temptation and opportunities to indulge.
While I’m not sure how successful I’ll be at turning down those adorable (and delicious!) gingerbread men I so love to nibble on at this time of year, I can say I’ll be able take control in my kitchen and whip up meals that taste indulgent, but are actually pretty easy on the waistline, like Beef and Barley Soup.
My husband and I adore this recipe so much we’ve made it twice in the past two weeks. It’s a soup that’s so thick and hearty you can actually call it a stew, yet it’s heart-healthy and chock-full of good-for-you veggies. Plus, barley is a whole grain that adds fiber to your diet, it has a great chewy texture, and provides a lovely hint of sweetness to foods.
Start by browning lean stew meat in a large soup pot. I love my Dutch oven for winter soups and stews, but any large pot will do. Next, add fragrant onions and garlic, sliced carrots, parsley, and thyme, then simmer the mixture for 45 minutes in savory chicken broth.
Finally, add potatoes, sweet potatoes, mushrooms and barley for a stick-to-your-ribs feel, and simmer for another 45 minutes.
The result is a hearty and satisfying soup that is pure comfort in a bowl. Actually, make that bowls. Since Beef and Barley Soup is pretty figure friendly, I don’t mind having a refill or two!
