Rebecca Coleman
Rebecca loves to eat really good food and wants to do right by her kids by providing them with healthy family meals. But she also lives in reality where doctor's appointments, swim lessons and traffic jams can derail even the best laid plains. While chronicling her 365 day cooking adventure (Rebecca cooked 365 recipes in 365 days with her kid) she realized that she was over focusing on making THE healthiest meal she could and not focusing enough on what really matters -- time spent together in the kitchen. Today, Rebecca spends time cooking with her kids making reduced guilt meals. Using simple substitutions (wheat flour instead of white, Greek yogurt instead of sour cream), Rebecca turns many not-so-healthy recipes into slightly more healthy meals that are actually tasty...and she doesn't feel guilty one bit!
