So, three things to make with tequila. But here’s the real twist: not one of them is a margarita. Yeah, yeah, we know — there are plenty of people out there who’ll say, “Heck, I have no problem figuring out how to finish off a bottle of tequila.” To them we say, “Bottoms up! And here’s a couple aspirin for the morning.”
Truth is, there are a lot of ways to enjoy the sweet, seductive flavor of tequila without drinking it. One of the best? As the base for a piquant marinade that soaks in and add kickin’ flavor to any number of meats: shrimp, fish, chicken — you name it. In fact, the tequila marinades here would go just as well with beef or pork, too. A bit of jalapeno pepper here, a dash of cumin there, maybe some orange zest — and of course, don’t forget the lime. You get all the best flavors of a margarita and more, no aspirin required.
The best thing about marinades? They’re easy to prep, and they do so much of the work flavoring your meat for you. Just toss these marinated shrimp on the grill for a couple minutes, and you’ve got a dinner that’s ten times better than your local Tex-Mex place (and half the price).
Marinated white fish is the base for these fish tacos, which are bursting with fresh flavor. We like the addition of juicy mango slices.
