Lighter than bread but just as versatile, we still sometimes find ourselves stuck in thinking that flour tortillas are only good for a handful of Mexican meals, like soft tacos or quesadillas. And while they seem to say reasonably fresh in the fridge, still it’s happened more than once when we go to clean out the shelves that we find a forlorn package of leftover flour tortillas, the remnants of what was used for dinner weeks ago. Instead of letting your tortillas go stale, use ‘em up in one of these three not-quesadillas recipes—one for breakfast, one for lunch and one that makes a perfect snack. Each recipe can easily be adjusted to accommodate just how many leftover tortillas you have on hand.
