Devotees of those prepackaged mixed-green salads might do well to snap up a couple bags of coleslaw mix the next time you’re in your produce section. Not only is it often ridiculously inexpensive (a recent sale at our local grocery store had ‘em 10 for $10 … though we have to admit, we’re at a loss as to what you’d do with 10 full bags of coleslaw mix), but it’s surprisingly versatile as well. Where once we might have eyed a bag of coleslaw mix and thought, well, coleslaw, as these recipes show, coleslaw mix can add a welcome bit of texture to a broad range of dinners, from a hot and cheesy tuna melt to a warm, Thai-inspired steak salad. It sure beats shredding cabbage by hand.




1. Hot Tuna Hoagies

These hot tuna melts are hearty enough for dinner and easy, too — just 15 minutes is all it takes to make these toothsome sandwiches.




2. Thai Steak Salad

London broil is marinated in a flavorful Asian marinade then grilled, sliced and tossed with a warm Thai-inspired salad. It’s a perfect dinner for warm spring nights.




3. Open-Faced Barbecue Tilapia Sandwiches

A simple dressing of lemon juice and mayonnaise tossed with coleslaw mix makes for an excellent accompaniment to grilled tilapia.

    If I had lucked out with that many bags of shredded coleslaw mix, I’d have gotten out my quart jars and made Kimchi!

    I like to use a package of rainbow slaw to make a fast stir-fry. It’s a great short-cut instead of chopping veggies for an hour! just add an onion, maybe a bell pepper, and seasonings (soy, garlic, ginger etc.) and you’re good to go. I usually add some tofu and serve over brown basmati rice.
