This week, we’re featuring a classic pantry staple: canned tuna. We’ve cast our net wide (so to speak) and come up with three quick-and-easy dinner recipes that are not tuna casserole! Each can be prepped and on the table in 25 minutes or less, and they feature a range of out-of-the-ordinary flavors, from a tangy tuna pomodoro to a spicy Southwestern skillet.
1. Southwest Tuna and Black Beans

This two-step skillet dish is about as easy as it gets, and the tuna makes for a tender accompaniment to creamy black beans.
2. Tuna Pomodoro

Classic Italian flavors meld into a bright and healthy main-course pasta dish.
3. Tuna-Potato Cakes

Light but comforting, these easy tuna-potato cakes go great with a green salad and a side of tartar sauce.

I love to fix a one pound box of Orzo pasta, add a can of peas, 2 cans of chunk light tuna, and what ever condiments you like to make up a pasta salad. YUMMMMM!
