We love a good summertime cookout with everyone ohh-ing over grilled baby-back ribs as the star attraction, or a languid summer picnic with a basket of fried chicken. But if living well means living in a certain kind of balance, then we love those other kinds of summer dinners as well — light, simple and chock full of the fresh flavors of the season.
This 3-Bean Caprese Salad falls into that latter camp, with its summer-ripe tomatoes, fresh parboiled green beans, and a healthy serving of sweet basil. There’s a whole lot of green there that won’t cost you a lot of green: this 3-Bean Caprese Salad yields 6 servings at just $1.63 per serving.
Sure, you can toss in some salami or cooked chicken to give it more heft, but we’ve got to admit: on it’s own with a hunk of bread and a chilled glass of white wine, it’s a whole other essence of summer.
