  • 1/2  pound
    Smithfield bacon, diced

  • clove garlic, finely minced

  • 2  15.5-ounce can
    black-eyed peas, drained and rinsed, or about 4 cups cooked and drained

  • 1  10-ounce can
    diced tomatoes with lime juice and cilantro

  •   pinch
    cumin

  • 1/2  cup
    cheddar cheese, shredded

    salt and pepper, to taste

  • 2  tablespoons
    chopped chives for garnish

    Corn chips or tortilla chips for dipping

Directions
1.
In a medium sauce pan over medium heat, add diced bacon and cook until crisp. Remove cooked bacon to a paper towel lined baking sheet to drain.
2.
Stir onion and garlic into rendered bacon fat and cook until onions are translucent. Stir in black-eyed peas and heat through. Stir in tomatoes and cook for an additional 5 minutes. Salt and pepper to taste. Add cheddar cheese and stir until cheese has melted. Stir in cooked bacon.
3.
Garnish with chopped chives and serve warm with corn chips or tortilla chips.
