Ingredients

1/2 poundSmithfield bacon, dicedsee savings

1small yellow onion, dicedsee savings

2clove garlic, finely mincedsee savings

-
2 15.5-ounce canblack-eyed peas, drained and rinsed, or about 4 cups cooked and drainedsee savings

-
1 10-ounce candiced tomatoes with lime juice and cilantrosee savings

-
pinchcuminsee savings

-
1/2 cupcheddar cheese, shreddedsee savings

-
salt and pepper, to tastesee savings

-
2 tablespoonschopped chives for garnishsee savings

-
Corn chips or tortilla chips for dippingsee savings

Directions
1.
In a medium sauce pan over medium heat, add diced bacon and cook until crisp. Remove cooked bacon to a paper towel lined baking sheet to drain.
2.
Stir onion and garlic into rendered bacon fat and cook until onions are translucent. Stir in black-eyed peas and heat through. Stir in tomatoes and cook for an additional 5 minutes. Salt and pepper to taste. Add cheddar cheese and stir until cheese has melted. Stir in cooked bacon.
3.
Garnish with chopped chives and serve warm with corn chips or tortilla chips.
