Black Bean Soup
You'll have dinner in 15 minutes with this recipe. Beans, tomatoes, and spices combine to make a healthy one-dish meal.

Ingredients

1 onion, chopped

1 Tbsp. cumin seed

4 cloves garlic,minced

2 Tbsp. olive oil

3-1/2 cups chicken broth

3 tomatoes, chopped

1 15-ounce can black beans
-
1 4-ounce can diced green chilie peppers

1 Tbsp. fresh cilantro, snipped

crushed tortilla chips
Directions
1.
Saute 1 chopped onion, 1 Tbsp. cumin seed, and 4 cloves minced garlic in 2 Tbsp. olive oil.

Add 3-1/2 cups chicken broth, 3 chopped tomatoes, one 15-ounce can black beans, and one 4-ounce. can diced green chile peppers. Bring to a boil, cover and simmer 5 minutes.

Add 1 Tbsp. snipped fresh cilantro. Garnish soup with 2 cups crushed tortilla chips. Makes 4 servings.
