Black Bean Soup

Ingredients
1 pound dried black beans
1 ham hock
1 onion, chopped
2 cloves garlic, minced
3 (14.5-ounce) cans chicken broth
1 (10-ounce) can diced tomato and green chilies
1 teaspoon ground cumin
1/2 teaspoon salt
Garnish:
sour cream, shredded cheese, sliced green onions
Directions
1. Sort and wash beans; place beans in a large Dutch oven. Cover with water to a depth of 2 inches above beans. Cover with lid and let soak overnight. Drain beans, and place in a 4-quart slow cooker.
2. Add ham hock and remaining ingredients, stirring to combine. Cook, covered, on HIGH for 5 to 6 hours, or on LOW for 8 to 10 hours.
3. To serve, remove ham hock and discard. Serve with desired garnishes.
