Berry-Orange Grunt
Orange and nutmeg flavor the dumplings that bake atop this summer dessert recipe. Use your favorite berry or a combination of blueberries, raspberries, and blackberries.

Ingredients

Fruit:

4 cups berries (blueberries, raspberries and/or blackberries)

1 cup sugar

1/4 cup orange juice concentrate

1 teaspoon grated orange rind

Dumplings:
-
1 cup all-purpose flour
-
1/4 cup granulated sugar
-
2 teaspoons grated orange rind
-
1 teaspoon baking powder
-
1/2 teaspoon baking soda
-
1/4 teaspoon salt
-
1/4 teaspoon ground nutmeg
-
2 tablespoons unsalted butter, melted

3/4 cup buttermilk
-
Vanilla ice cream (optional)
Directions

Fruit: Mix berries, sugar, orange juice concentrate and rind in 9- or 10-inch skillet with tight-fitting lid. Simmer, uncovered, 2 to 3 minutes.

Dumplings: Mix flour, sugar, rind, baking powder, baking soda, salt and nutmeg in large bowl. Mix melted butter and buttermilk in small bowl. Add to flour mixture, stirring to moisten and form loose dough.

Drop dough over fruit in small dumplings. Cover tightly; cook over medium heat 20 minutes, until dumplings are set. After 15 minutes, check for dumpling firmness--no peeking before then.

To serve, scoop dumplings into dishes, cover with sauce, and serve with ice cream if desired.
