Berry-Balsamic Vinaigrette

The sweet tang of this rosy dressing pairs nicely with nuts, cheese, avocado or grilled chicken breast in a mixed green salad. A full 2 cups of strawberries boost the dressing's vitamin C and fiber, while the olive oil is high in omega-3 fatty acids, a healthy fat that fights inflammation and protects against heart disease.

    chopped fresh strawberries or 2 cups chopped frozen strawberries, thawed
  • 1/3  cup 
    olive oil
  • 2   tablespoons 
    white balsamic vinegar or balsamic vinegar
  • 1   tablespoon 
    packed brown sugar
  • 1/4  teaspoon 
    kosher salt
  • 3/4  teaspoon 
    ground black pepper
Combine all ingredients in a blender. Cover and blend until smooth. Transfer the dressing to a covered container and store in the refrigerator for up to 3 days. Whisk well before serving.
  • If using fresh, sweet berries, you may choose to omit the brown sugar.
