Beer-Turkey Chili

turkey breast tenderloin or skinless, boneless chicken breasts or thighs, cut into bite-size strips or cubes

chopped green sweet pepper

chopped onion

bottled minced garlic

cooking oil

28-oz. cans
diced tomatoes, undrained

15-oz. cans
black beans or Great Northern beans, rinsed and drained

12-oz. can
beer

red wine vinegar

Tbsp.
chili powder
1
tsp.
salt
1
tsp.
dried oregano, crushed

tsp.
ground cumin

tsp.
ground black pepper
1/4
tsp.
bottled hot pepper sauce

shredded Monterey Jack or cheddar cheese (4 ounces)
Directions

In a Dutch oven cook turkey or chicken, sweet pepper, onion, and garlic in hot oil until turkey is browned.

Add undrained tomatoes, beans, beer, vinegar, chili powder, salt, oregano, cumin, pepper, and hot pepper sauce. Bring to boiling; reduce heat. Cover and simmer about 20 minutes or until turkey is tender, stirring occasionally. Sprinkle some of the cheese over each serving. Makes 8 (1 1/2-cup) servings.
