Beef Salad with Fresh Basil Dressing

Tender strips of beef teamed with crunchy vegetables, crisp greens and a creamy low-fat dressing satisfy even the heartiest appetite.

1 tablespoonsnipped fresh basil or 1 teaspoon dried basil, crushedsee savings

1 tablespoonlemon juicesee savings

1 teaspoonsugarsee savings

Dash peppersee savings

6 cupstorn mixed greenssee savings

8 ounceslean cooked beef, cut into thin stripssee savings

1small parsnip, thinly slicedsee savings

1medium carrot, thinly slicedsee savings

1/2of a small zucchini, slicedsee savings

1/2 cupbroccoli floweretssee savings

1/2 of a 16-ouncecan julienne beets, well drainedsee savings

Directions
1.
For the dressing, in a small mixing bowl stir together buttermilk, mayonnaise or salad dressing, basil, lemon juice, sugar, and pepper. Cover and chill in the refrigerator.
2.
For salad, toss together the mixed greens, beef, parsnip, carrot, zucchini, and broccoli. Add the chilled dressing and toss to coat. Spoon onto 4 individual serving plates. Garnish with drained beets. Makes 4 servings.

Prepare dressing; cover and chill up to 2 days.
