    diced Smithfield Smoked Sausage, per person

Directions
1.
Heat pan, spray with non-stick cooking spray. Scramble the eggs. Fold in diced smoked sausage. Spoon a scoop of eggs and sausage on each tortilla. Add cheese. To wrap the tortilla, tuck end in and roll tightly to compact eggs and sausage.

Serving Suggestions
Top with salsa and sour cream.
