  • 4    pieces salmon fillets or steak (6 ounces each), any small bones removedOn Sale

  • 1    bunch fresh basil, washed and stemmedOn Sale
  • 4  cloves  garlic, peeledOn Sale

  •     Grated rind of 1 lemon (2 teaspoons) and juice (1/4 cup)On Sale

Directions

Place salmon in baking dish.

Marinade: Combine basil, garlic, oil, rind, juice, salt and pepper in blender. Whirl until smooth paste. Spread half of basil mixture over salmon; reserve remaining half for basting. Turn salmon over to coat well. Marinate the salmon in the basil mixture for 30 minutes, turning after 15 minutes.

Prepare outdoor grill with hot coals, or heat gas grill to hot, or heat oven broiler. Grill salmon, basting with reserved marinade, for 4 to 5 minutes per side or until opaque in center. Transfer fish to plates. Serve with Spicy Corn Relish.
