Barbecue Pulled Chicken

This fanciful reinterpretation of pulled pork uses chicken and lots of tomato sauce. Have sliced jalapenos, sliced red onions and some sour cream on hand to top this hearty main course.

Ingredients

1 8-ounce canreduced-sodium tomato saucesee savings

1 4-ounce canchopped green chiles, drainedsee savings

3 tablespoonscider vinegarsee savings

2 tablespoonshoneysee savings

1 tablespoonsweet or smoked paprikasee savings

1 tablespoontomato pastesee savings

1 tablespoonWorcestershire saucesee savings

2 teaspoonsdry mustardsee savings

-
1 teaspoonground chipotle chilesee savings

-
1/2 teaspoonsaltsee savings

-
2 1/2 poundsboneless, skinless chicken thighs, trimmed of fatsee savings

-
1small onion, finely choppedsee savings

-
1 clovegarlic, mincedsee savings

Directions
1.
Stir tomato sauce, chiles, vinegar, honey, paprika, tomato paste, Worcestershire sauce, mustard, ground chipotle and salt in a 6-quart slow cooker until smooth. Add chicken, onion and garlic; stir to combine.

Put the lid on and cook on low until the chicken can be pulled apart, about 5 hours.
3.
Transfer the chicken to a cutting board and shred with a fork. Return the chicken to the sauce, stir well and serve.
Tip:
MAKE AHEAD TIP: Cover and refrigerate for up to 3 days or freeze for up to 1 month.
