Test Kitchen Tip
These recipes call for "ground beef" because that's how the meat is labeled. However, on their grocery lists, most folks usually write "hamburger," a term that refers to ground-up beef that's sold in bulk or in patties. To reduce the fat in cooking select ground beef that is labeled 90 percent or more lean. In dishes such as this pizza where the beef is flavored with other ingredients or is a part of a mixture, you'll never miss the extra fat.
