Avocado-Fruit Salad

Heart healthy avocados and walnuts combine with high fiber berries in this nutrient rich salad.

Ingredients

1/2 cupwalnut oil or salad oilsee savings

1/2 cupraspberry vinegarsee savings

-
Boston or Bibb lettuce leavessee savings

-
4 mediumred grapefruit, peeled and sectionedsee savings

-
2 mediumavocados, seeded, peeled, and sliced lengthwisesee savings

-
2 mediumpapayas, seeded, peeled, and sliced lengthwisesee savings

-
1/4 cuptoasted chopped walnutssee savings

-
1 cupraspberries (optional)see savings

Directions
1.
For dressing, combine walnut oil or salad oil and raspberry vinegar in a screw-top jar. Cover and shake well. Chill dressing in the refrigerator for at least 1 hour.
2.
Line eight salad plates with Boston or Bibb lettuce leaves. Top with grapefruit sections, avocado slices, and papaya slices. Sprinkle with toasted walnuts.
3.
If desired, sprinkle the salad with raspberries. Shake dressing well; pour over each salad. Makes 8 servings.
