4 large baking potatoes, scrubbed
2 teaspoons olive oil
8 ounces asparagus (about 1/2 bunch), trimmed, peeled and cut into 1-inch pieces
1/4 teaspoon salt
1/4 teaspoon pepper
4 tablespoons margarine or unsalted butter
2 ounces herbed cheese bits (such as Boursin Toppers)
Heat broiler. Pierce potatoes with a fork. Place on paper towels in the microwave. Microwave on HIGH for 16 minutes, turning over halfway through.
Carefully cut open potatoes; season with remaining 1/8 teaspoon each salt and pepper. Dot with margarine; top with asparagus. Divide cheese evenly among potatoes. Broil for 2 to 3 minutes or until cheese is lightly browned on top.
