Asian-Style Drumsticks

Ingredients

2 stalks fresh lemongrass, minced, or 3 pieces dried lemongrass or 1 teaspoon fresh lemon zest

2 tablespoons fish sauce

1/4 cup oyster sauce

2 tablespoons low-sodium soy sauce

2 teaspoons fresh ginger, minced

3 cloves garlic, minced

2 shallots, minced

1/4 cup light-brown sugar

2 teaspoons black pepper

2 pounds chicken drumsticks
Directions

In a large bowl, combine lemongrass, fish sauce, oyster sauce, soy sauce, ginger, garlic, shallots, sugar and black pepper; mix well.

Remove skin from drumsticks, place in the marinade and turn to coat. Cover and refrigerate at least 30 minutes.

Heat broiler. Broil chicken 4 inches away from heat source for 15 to 17 minutes or until internal temperature registers 160 degrees F on an instant-read thermometer. Turn every 5 minutes to avoid burning.

Meanwhile, strain marinade into small saucepan. Add 3/4 cup water and bring to a boil over high heat; boil for 3 minutes. Remove from heat and drizzle over drumsticks. Serve immediately. Note: For a simple side dish, combine 1 package coleslaw mix with miso-sesame dressing to taste; add chopped fresh ginger and sesame seeds.
