Artichokes with Lemon-Mustard Mayo
If you've never made artichokes, try this easy side-dish recipe. Served with the homemade lemon-mayonnaise dip, it's sure to impress your guests.

Makes 8 artichokes and 1-3/4 cups lemon-mustard mayo.
Ingredients

1-1/2 cups mayonnaise finely grated zest of 1 lemon

2 Tbsp fresh lemon juice

2 tsp Dijon mustard

8 fresh artichokes, tops and outer leaves trimmed
Directions

In a medium bowl, combine mayonnaise, zest, juice and mustard; salt and pepper to taste. Cover and refrigerate until ready to serve.

Place artichokes in a large pot of salted water, cover and bring to a boil over medium-high heat. Reduce heat to medium and cook until tender when pierced with a knife, 35 to 40 min. Drain well. Serve warm with mayo. Makes 8 artichokes and 1-3/4 cups lemon-mustard mayo.
