Applesauce-Oatmeal Muffins

Ingredients

1 1/2 cups oats (quick or old fashioned), uncooked

1 1/2 cups all-purpose flour

3/4 cup firmly packed brown sugar

1 teaspoon baking powder

3/4 teaspoon baking soda

1 teaspoon ground cinnamon

1 cup unsweetened chunky applesauce

1/4 cup vegetable oil
-
1 egg
-
1/2 to 3/4 cup milk
Topping:
-
1/3 cup oats (quick or old fashioned), uncooked

1 tablespoon firmly packed brown sugar

1/2 teaspoon ground cinnamon

1 tablespoon margarine, softened
Directions

Preheat oven to 400 degrees.

Line 12 muffin cups with paper liners or lightly coat with vegetable-oil spray.

Combine 1 1/2 cups oatmeal, flour, 3/4 cup brown sugar, baking powder, baking soda, and 1 teaspoon cinnamon in a medium mixing bowl; mix well. Add applesauce, oil, and egg. Stir in enough milk to reach desired consistency. Spoon batter into muffin cups, filling just below brim.

Prepare topping by combining remaining oatmeal, brown sugar, and cinnamon in a small bowl. Blend in margarine. Sprinkle on top of each muffin.

Bake for 25 to 30 minutes or until golden. Let muffins cool in cups for 5 minutes. Remove from cups and place on a wire rack
