  • 6 medium cooking apples, cored and cut into 1-inch pieces (about 6 cups)
  • 1 7 ounce package mixed dried fruit bits
  • 1/3 cup sugar
  • 2 teaspoons grated orange peel
  • 1/2 teaspoon ginger
  • 1/4 teaspoon cinnamon
  • 1 tablespoon quick-cooking tapioca
  • 1 bottle (8 oz, 1 cup) apple juice
  • 3 tablespoons rum or 1/2 teaspoon rum extract
  • 2 1/2 cups frozen fat-free non-dairy whipped topping, thawed

Once you know how to make basic roasted butternut squash, you can spice it up almost any way you want┐sprinkle it with rosemary and lemon zest, toss in some caramelized shallots, or sprinkle with toasted pine nuts.

In 4- to 5-quart crockery cooker combine apples, dried fruit, sugar, orange peel, ginger and cinnamon. Sprinkle with tapioca.
In small bowl stir together apple juice and rum. Pour over fruit. Cover and cook on low-heat setting for 6 to 8 hours or on high heat setting for 3 to 4 hours.
